A thick white liquid that tenderises and enhances the umami in foods.
Shio Koji is made by fermenting rice and sea salt and comes straight from Japan.
We chose squid to show you the results because of its negative reputation for being chewy and tough.
We have been amazed. You.. come and taste it yourself.
