Chef Alexis Gauthier, comedian Sara Pascoe, and theatre director Steve Marmion all work towards the live moment.
Whether the audience is sitting in the dark hanging on every word (hopefully) or taking a first taste of an exquisite starter (hopefully). The moment hangs in the air and will never be repeated. All the work, testing, rehearsing, evolving, ends up as a moment offered up to a (hopefully) paying customer. How much does the reaction matter, how does it change the next line or the next night or the next menu? How do they take the reactions and use them to evolve the work? How does a bigger laugh, or no laugh, a gasp or silence, a dish changed or applauded effect what happens next? How to they prepare? How do they create the right space for the live moment? This year on London stages we have had Kevin Spacey responding in character to an phone ringing in the audience… to a roof falling in. From the unexpected to the disastrous, working in the live space is a challenge and an art.
