You are invited to Cooking With Mama’s 'Trinidadian Escape' supperclub and cooking experience! With Mama Lee as your Captain, leave the chilly winds of Britain behind for one night and sail to the Caribbean island of Trinidad and Tobago (T&T) for an evening of tantalising flavours that conjure up thoughts of island sunshine. Trinidadian food is a melting pot of flavours from African to European, Middle Eastern to Native American. Mama Lee will teach you how to recreate the flavours and colours of Trinidadian cooking. Her meals are perfect for entertaining guests or cooking for one!
In curating this menu, Mama Lee has been inspired by the food she remembers eating from her Auntie's kitchen and by Trini street foods popular during Carnival season.
Starter – The Ultimate Trini Street Food!
Buljol (warm salad of salted codfish, tomato, onion, avocado and a kick of red pepper) and Doubles (light and soft flatbread fried until golden brown served with delicious curried chickpeas)
Main – The National Dish of Trinidad & Tobago!
Chicken Pelau (one-pot, rice-based dish with chicken and Mama Lee's special green seasoning) OR Vegetarian Pelau (vegetarian version of the same dish).
Side: Decadent T&T Potato Salad based on the secret recipe from Mama Lee's auntie
Dessert: Juicy Pineapple Upside-Down Cake
As with all our supperclub/cooking experiences, you will have the opportunity to partake in some of the cooking with Mama Lee's expertise to guide you!
Your 2.5 hour supperclub includes
Interactive cooking presentation. Hands-on cooking experience with the help and expertise of Mama Lee by your side. All ingredients, cooking equipment and recipe cards with step-by-step instructions. Private dining experience to feast over your culinary creations with new friends. Welcome drinks and nibbles with fellow cooking enthusiasts.
