This Christmas Pop Up Barbados is giving you a taste of the finest Creole dishes. If you are in search of the extraordinary flavour you will find that real experience her. These dishes are cook with passion and creativity by chef Barrie Gunning who has been cooking from the age of 10 and always creating his own dishes. I use only the freshest and best quality ingredients, either organic or from renown suppliers.

STARTER

Shredded Cod Layers with Avocado Creme
(fresh cod shredded and layered with cucumber and served with avocado puree)

MAIN
(served with sweet potato mash)

Guiana Style Haunch of Wild Boar
(wild bored flavored with a carib selection of herbs and spices then slow roasted)

DESSERT

Orange & Cinnamon Sponge Cake with Mango Custard
