Giancarlo has a vast knowledge and passion for cooking Italian meat dishes. Come and spend this fabulous, recipe packed class where he will guide you through a wide range of cuts and cookery methods: Giancarlo will introduce you to T-bone steaks, veal, poultry, game (if in season) and he will also teach you how to make your own sausages. He will also explain what to look for when buying and sourcing meat. Together you will cook an array of meat dishes, they will vary depending on the season, but may include scottiglia (a classic Tuscan dish), steak tagliata with rocket, parmesan & balsamic dressing, partridge with Vin Santo, sausages with peas & tomatoes and pork chops with pecorino & spinach.
