The morning session will start with core knife skills, with an emphasis on preparing fish for Japanese food. In the hands-on session; you will learn how to fillet a whole fish, sashimi slicing; as well as special techniques for preparing vegetables and fruit. The course will help build your confidence with a knife for all types of cuisine, improving and developing your technique. The class will also look at best sharpening practice and how to look after your knives. Lunch will be based on the ingredients you have cut during the session.
After a tasty lunch, the afternoon session will be dedicated to a sushi class. Yuki will teach you how to make perfect sushi rice and you will also learn authentic Japanese sushi fillings, different shapes and rolling techniques. Advice will be given about finding the best, freshest ingredients and using locally available products to create your own sushi at home.
