Dishes from Yuki’s home region in Japan form the structure of this class, Yamanashi is considered a beautiful country escape from Tokyo and the food is a major draw for visitors. Soba noodles are a particular specialty and Yuki uses them for a unique type of sushi. Many of the recipes in this class are ideal for vegetarians or people who are not crazy about the idea of raw fish.
