In this dinner we would like to bring you to this amazing dish called TRUFFLE.
A truffle is the fruiting body of a subterranean Ascomycete fungus, predominantly one of the many species of the genus Tuber.Truffles are rare.
There are 2 famous kind of Truffles: WHITE and BLACK.

The white truffle (Tuber Magnatum Pico) is the most widely known truffle because of its taste and commercial importance.It smells pleasantly aromatic and contrary to other types of truffles it does not have a garlic-like smell. This makes it unique. It lives in symbiosis with oak trees.
The white Truffles are only available a couple of months of the year, almost exclusively from one part of Italy, where they must be foraged by special pigs, and there are fewer of them, and of lesser quality, every year. They are, in short, the perfect luxury commodity, precious and getting more so all the time.There's no question that white truffles have a unique aroma, a combination of newly plowed soil, fall rain, burrowing earthworms and the pungent memory of lost youth and old love affairs

 

The black truffle (Tuber Melanosporum Vitt.) looks fairly smooth and round with polygonal warts. The black winter truffle has a trama that acquires a blackish shade of purple when fully ripe.
The black truffle is known as The Norcia or Perigord black truffle. The flesh is clear, its perfume is intense, aromatic and fruity.
It grows in hilly and mountainous areas in symbiosis with hazel and oak. After the white truffle, it is considered the most valuable commercially and is a significant ingredient in international cuisine


Truffle hunters in Italy use pigs and mixed-breed dogs to sniff out truffles. Dogs are preferred to pigs because pigs love to eat truffles.

In Italy, truffle dogs are trained in several steps. First, the dog is taught to retrieve a rubber ball. Next, a small bit of smelly Gorgonzola cheese is substituted for the rubber ball. After the dog has learned to retrieve the cheese, the cheese is hidden, forcing the dog to sniff it out for a reward of food. Finally, a small truffle is substituted for the cheese. The dog is trained to fetch, then dig up the truffle. 
So be ready because this dinner is going to be unique and special.

RAVIOLI STUFFED WITH RICOTTA CHEESE AND SOFT YPLK IN WHITE TRUFFLE SAUCE

Egg pasta filled with a soft egg yolk cuscioned in Ricotta cheese, drizzled and coated with a white Truffle sauce.

 

RISOTTO ALLA PARMIGIANA WITH WHITE TRUFFLE

This is a delicate risotto and gaining confidence with Truffle will open your eyes to the marvellous world of the risottos. Parmigiana risotto is the father of all the risottos and is the basic risotto recipe from which all others are developed! Parmigiana risotto is the best way to taste white Truffle in a risotto dish

 

ROASTED FILLET OF VEAL SERVED WITH ROOT VEGETABLE WITH BLACK TRUFFLE IN BLACK TRUFFLE SAUCE

 

SECRET DESSERT

eh eh Stefano doesn't want tell me what the dessert is going to be..so...can't wait to see what it is :-)
