Leading, award-winning Malaysian chef Norman Musa will be holding an extra-special supper club of traditional Malay wedding food.
This promises to be one of his most delicious evenings yet, serving cuisine that is kept for weddings in Malaysia:
Udang Galah Panjat | “Climbing” King Prawns
Lightly fried king prawns with coriander, cumin and fennel
Kerabu Mangga | Mango Salad
Sweet, sour & mild spicy mango salad with fresh ginger flower, basil leaves, crushed peanuts and lime juice
Hiasan Udang Galah
‘Karipap’ crispy pastry in the shape of a lobster with potato and herbs filling – inspired by Chef Norman’s childhood memories of watching his late mum making the pastry as a wedding gift
Ayam Golek | Roast Chicken
Whole chicken marinated with herbs and spices, roasted and then slowly simmered in chilli and toasted spices gravy
Rendang Daging | Beef Rendang
Slowly simmered beef in lemongrass, galangal, chilli, turmeric and roasted coconut
Ikan Bawal Masak Sos | Black Pomfret in Chilli & Tomato Gravy
(exact fish variety subject to availability from Billingsgate Market)
Black pomfret marinaded with turmeric, lightly fried and topped with chilli and tomato gravy, fresh spring onion and coriander
Pajeri Nenas | Pineapple in Curry Gravy
Roasted pineapple in thick curry gravy using Chef Norman’s special curry powder blend, roasted coconut, cinnamon and star anise
Acar Timun & Nenas | Pickled Cucumber & Pineapple
Sliced cucumber, pineapple, sliced chillies and vinegar
Traditional wedding rice cooked with ghee, rose water, raisins, almonds, spices and herbs
A selection of Malaysian sweets and beautifully carved fruit basket
When Norman's sister got married the entire village were invited and 2,000 guests were fed throughout the day. We, however, only have about 1% of that capacity, so get booking fast!
Held in his loft-style apartment overlooking a canal and the Olympic Park, Ning London supper clubs are always a delectable and sociable affair.
