Before we all overdose on Turkey, the next supperclub will be a succulent slow roast shoulder of Lamb. Normally I’d do a nice leg of lamb but at this time of year the shoulder is perfect for slow cooking. As the lamb matures towards mutton and prepares for the harsher winter months, a little more fat develops around the shoulder muscles. And when its cooked over several hours this fat melts into the meat and produces delicious succulent flavours and the meat just falls off the bone.
