MarchaVale is a food blog run by a culinary professional Javi V. Rejas, a head chef of "The Little Taperia" in Tooting. Trained in Valencia, Javi describes himself as a "Spanish chef anchored in London". Passionate about food, he worked his way up in hotels back at home (Melià, Tuc Blanc, Hilton) and then ventured out to Switzerland and finally UK, learning from and making friends with his contemporaries along the way.
As a chef, he enjoys both classical and vanguard cooking methods and regardless of its popularity status - molecular gastronomy. Tries new things all the time and explores international cuisines for ingredients he can introduce into his cooking.
Productive blogger, he appreciates honesty, and hates when people criticize something without understanding it or are motivated by a hidden agenda. Doesn´t ever want to stop learning.
