This class is ideal for vegetarians and people who are keen to learn more about Japanese vegetarian dishes. Tofu is healthy, but it is also very popular due its taste and enjoyable texture, you might be surprised by how many different ways it is cooked in Japan.

Yuki will introduce a range of different types of Miso and explore its use in Japanese dishes. You can also taste types of noodles such as Soba noodle, Udon noodle. Yuki will introduce Japanese ingredients and spices and where to find them locally, alongside core locally available produce. She will give you tips for healthy eating and cooking a balanced healthy diet. Food made during the class can be be enjoyed for lunch or dinner afterwards.


Course Contents

Using tofu in distinct ways to produce maximum flavour and style, in addition to it’s health benefits.
Preparing different types of vegetarian stock.
Cooking with a range of vegetables to produce a balanced diet.
Cooking with sea vegetables such as Hijiki or Kombu.
