We first met when Jamie Oliver and I worked on an extended shoot together, and I demonstrated the basics of Vietnamese food to him in my flat, including how to make pho and fresh summer rolls. He also served food to guests at the supper club and joined us for dinner.
This inspired me to host my own Vietnamese Cooking Classes, the only ones in the UK, where I give hands on demonstrations of up to ten typical Vietnamese dishes in each session. Its like the supper club - a lot of eating is involved except you learn how to make them too!
I have been doing them once or twice a month in my little kitchen - the only real Vietnamese cooking class in London/ UK (at the moment).
We talk about the essential ingredients, yin and yang of food and we go through the typical breakfast, lunch and dinner.
Vietnamese food is about the balance of flavours, of sweet, salty and sour – there is no measuring device that can ever match your own taste buds. We will make sauces together as well and I will introduce you to how we do it and share any knowledge I may have about all the health benefits of certain herbs and vegetables.
This often changes but we would make something like this and enjoy it all throughout the day:
It is maninly demonstration but you will get your hands on rolling summer rolls, prepping vegetables and ingredients and will be eating throughout.
